Menu Plan Monday


I haven't written out my menu plan in a few weeks, but I'm doing it now. It keeps me accountable. And it's part of a committment to eat at home during the week so we can spend less money and avoid fast food. You can see the meals get easier as the week goes by.

Sunday - Tonight we're having t-bone steaks (on sale at Kroger, grilled by hubby), baked potatoes, green beans, and salad.

Monday - grilled chicken and fettucine alfredo*, garlic bread, salad

Tuesday - Taco Salad**

Wednesday - crunchy fish fillets, mac-n-cheese, carrots

Thursday - Soup and grilled cheese sandwiches

Friday - pizza night - probably out

*alfredo sauce
1 pint heavy whipping cream
1/2 cup butter
1 1/2 cups grated Parmesan cheese
pressed fresh garlic to taste


** taco salad
I don't really measure everything - just toss it together in a big bowl
taco meat - ground beef and seasoning mix prepared according to package
tostada chips
small can sliced ripe olives
package of shredded mild cheddar cheese
head of lettuce, shredded
chopped fresh tomatoes
French dressing (sometimes Catalina)

  3. it amazes me Diane, that you know what you are making all week! I am truly doing something wrong over here! I don't think I could possibly do this ever!! I barely know what tomorrow may bring!!
    I guess it makes sense that I am totally unorganized too! ??

  4. Your Alfredo recipe sounds very similar to mine. This last time I made it I changed things up a little bit. Because I use so much butter there is alot of greasy separation when we have leftovers. So this last time I used a tablespoon of butter, one scrambled egg, 1 pint neavy whipping cream and 1 1/2 cup Parmesan cheese. It tasted great! I couldn't test to see if the leftovers were not as greasy because there were no leftovers! But thats always a good sign that something tastes good, right?
